I’d be willing to fire the pellet from VCL’s pellet gun into the brain of the dim-witted animal….to make it clear the Wild Turkey is the subject of the adverb “dim-witted”

Bear Warning
While vacationing in BFN, I couldn’t help but notice all the warnings about bears posted in campgrounds, visitor centers and rest areas advising people not to feed the bears, how to avoid bears, what to do if a bear sees you, what to do if a bear attacks, and so on.

My favourite, however, was a hand-lettered sign on the door of a small gas station in a remote area. It said: “Warning! If you are being chased by a bear, don’t come in here!”

@Can Opener: Happy you are so happy with your wood delivery. We usually get 6 cords delivered and have to haul it up from our driveway into our porch. It’s a major undertaking every year and I just hate the thought of having to do it, but it sure is fun having the fireplace going in the winter.

read the sadness of yesterday’s blog and just wanted to add my own story….my mother died suddenly on friday the 13th back in 2003 as the result of a train hitting and crushing her car….she got trapped on train tracks and tried to do a u-turn to get off the tracks …only to have her front drive wheels go off the track so that she now faced the train as it bore down on her….
the small town of ingersoll watched in horror as the 72 yr old closed her eyes and crossed her arms seconds before impact….the train locked its brakes and took over a mile to stop…severing the town in half for several hours as workers attempted to unlock the train brakes…..
There is a silver lining in any tragedy…as a result of this death and others on the same spot, the province coughed up the cash to build an overpass in town…..changes to the parallel tracks occurred and there have been no deaths ever since……
the funeral was huge as she was a well known volunteer and loved by many in ingersoll…thanking everyone for coming was very difficult for me…

Barbecued Wild Turkey
One stick (1/2 cup) margarine
1/2 cup chopped green onions or chives
1/4 cup lemon juice
1 Tbsp. thyme and savory, mixed
1 cup broth
3 Tbsp. parsley
Cut turkey into pieces across the grain. Cook onions until tender in butter, add other ingredients. Bring to a full boil. Cover each piece of turkey with this mixture. Baste often on grill. Cook 45 to 55 minutes or until done.

Cajun Deep-Fried Turkey
1 10 to 15-pound wild turkey
5 gallons peanut oil
2 tablespoons Cajun seasoning
1 stick butter
1 teaspoon garlic powder
1 teaspoon cayenne pepper
Pour peanut oil into 10-gallon pot. Place pot on propane burner used for fish cooker and heat to 375 degrees. Dry turkey and tie two cotton strings around carcass for ease in lifting. Carefully submerge into hot oil and deep fry for 3 to 4 minutes per pound and until turkey floats to the top. Remove from oil and dust with Cajun seasoning. In a saucepan, melt butter with garlic and cayenne, brushing bird with mixture before serving.
Chicken Fried Wild Turkey
1 turkey breast, deboned and cut into strips across the grain.
1 16 oz. bottle Italian dressing
1/2 tsp. Lemon Pepper
Dash of Liquid Smoke
2 eggs beaten
2 cups milk
Salt as needed
Pepper as needed
2 cups flour
Peanut or vegetable oil as needed
Marinate turkey strips in Italian dressing, lemon pepper, and Liquid Smoke for 8 hours or overnight. In small bowl, beat eggs into milk. In second bowl, mix salt pepper, and flour. Dip turkey strips in egg wash and then into batter. Deep fry in oil until golden brown. Drain on paper towels. Serve with gravy made with 2 Tbsp. flour combined in skillet with 2 Tbsp. melted butter, salt and pepper. Slowly add 1 cup milk, stirring constantly until thickened.
Creamy Turkey Breast
5-6 lb.turkey breast
1/4 C unsalted butter
2 cups heavy cream
2 cups peeled & coarsely chopped tart apples
2 tsp salt
1/4 Cup fresh lemon juice
1/2 t fresh ground black pepper
1/2 Cup applejack
1 Tbsp. corn starch
1 Tbsp. cold water
Preheat oven to 375 degrees. Sauté breast in 1/4 C butter until lightly browned on all sides. Remove and keep warm. Sauté apples in butter and juices in skillet. Scoop them out & place on bottom of heavy casserole. Place turkey breast on top. Pour off any fat in the skillet in which turkey and apples have been sautéed. Add applejack and swirl around over high heat for a minute or two, scraping the bottom of the skillet to de-glaze it. Pour it over the turkey breast. Cover the casserole and bake for 45 minutes. Add cream, lemon juice, salt and pepper and bake for another 30 minutes or until the breast is tender when pricked with a fork. Juices should be clear, *not* pink. Put breast on serving platter to keep warm, and pour off liquid from casserole into a saucepan. Add water to the cornstarch and stir the paste into the liquid. Cook over moderate heat for 1-2 minutes until the thickness is that of gravy. Pour over the turkey breast. Serve with wild rice and a salad.
Deep Dish Turkey Pie
6 medium Potatoes, diced
3 cups Turkey, cooked and chopped
6 medium Carrots, diced
1 ½ cups Flour
1 small Onion, chopped
2 teaspoons Baking Powder
¼ cup Green Pepper, chopped
½ teaspoon salt
2 Tablespoons Butter
¼ cup Butter
1 can Cream of Chicken soup
½ cup Milk
In a saucepan, cover the potatoes and carrots with water, and cook until tender, about 15 to 20 minutes. Drain, reserving 1 cup of the liquid. In a skillet sauté the onion and green pepper in 2 tablespoons of butter until tender. Blend the soup and reserve liquid in a bowl. Then place the soup mixture, turkey and cooked vegetables in a 2-quart casserole, and bake at 425°F for 15 minutes. Biscuits: Combine the flour, baking powder and salt in a bowl, cut in the butter until crumbly, add the milk, and mix well. Knead lightly on a floured surface. Roll and cut with a 2″ biscuit cutter and arrange over turkey mixture. Brush biscuits with additional milk, and bake for 15 minutes longer.

Wild Turkey Wild Turkey Recipe
Wild turkey strips are marinated in honey, bourbon, mustard, and Worcestershire sauce. They are then coated with seasoned flour before frying. If you do not have access to wild game turkey, domesticated turkey is just fine. You may also wish to try this with whole chicken breast. And, of course, any decent brand of bourbon will do. Wild turkey strips may be served as an appetizer or entree.
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
1 wild turkey breast (or domesticated turkey breast)
1/4 cup honey
1/2 cup Wild Turkey bourbon
2 Tablespoons spicy deli mustard
1 Tablespoon Worcestershire sauce
1 cup all-purpose flour
1 teaspoon Hungarian sweet paprika
1/2 teaspoon cayenne pepper, or to taste
1/2 teaspoon kosher salt
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
Canola oil for frying
1/2 cup grated Parmesan cheese
1 Tablespoon minced parsley
Preparation:
Remove the skin from the wild turkey breast and discard. Slice the meat crosswise into strips about 1/2 inch wide and 1 inch thick. Wash the meat and pat dry.
Place the honey in a medium micro-safe bowl and heat on High for 1 minute. Whisk in the bourbon, mustard, and Worcestershire sauce until smooth. Pour this marinade into a large freezer ziptop bag. Add the turkey breast strips, squeeze out the air, and seal. Toss to completely coat the meat and refrigerate for 4 hours.
Whisk together flour, paprika, cayenne pepper, salt, thyme, basil, onion powder, and garlic powder. Place mixture into a new dry ziptop freezer bag.
Remove turkey breast strips from the marinade and shake off excess liquid. Place the strips into the bag with the seasoned flour. Seal and toss to coat strips.
Heat 1/2 inch of oil in a heavy skillet. Fry turkey strips until golden. Do this in batches in order not to crowd the pan. Drain on paper towels. Sprinkle with Parmesan cheese and minced parsley and serve hot.
Wild turkey strips may be served as an appetizer or entree.
Yield: 4 servings

Go buy a turkey
Take a drink of whisky
Put turkey in the oven

Popcorn Stuffing
(sufficient for a 6-pound bird)
3 cups soft bread crumbs
1 teaspoon fresh thyme leaves
2 onions chopped finely
1 teaspoon salt
3 tablespoons chopped parsley
1/4 teaspoon pepper
1 tablespoon chopped fresh sage
2 eggs
3 sausages
1 cup popping corn
Put the bread crumbs into a mixing bowl with the onion. (Coarse onion will not cook, so cut it finely). Add the chopped herbs, salt and pepper, then stir in the eggs until all is lightly bound together. Use this to fill the cavity of the bird, allowing sufficient room for the popping corn to be packed in last. Use the sausages to fill the neck cavity of the bird. Do not pack the stuffing in hard. Use small skewers to secure the skin of the bird over the stuffing.
To roast the bird: Place the bird in a greased baking dish and pour a small quantity of melted butter over the top of the bird and cover with foil (allow sufficient air gaps). Baste frequently as this helps develop an even glossy golden brown skin.
How to determine if the turkey is cooked
Skin will be a golden brown colour
Temperature button (thermometer) will have popped
Backside of the bird will have been blown open
Skewers will be protruding from the wall opposite the oven
Oven door will be lying on the kitchen floor

Here is another Turkey reciepe for you.
Turkey Burgers
Ground Turkey
Onions
Feta Cheese
Sliced Olives
Fresh mint
Salt, pepper
Finely chop onions and then caramelize onions until golden
Add onions, olives, feta cheese, chopped fresh mint, dash of salt and pepper to turkey
Hand mix togther until well mixed
Fire up BBQ and grill until cooked
Serve with sliced cucumbers, tomato, lettuce and any other preferred toppings
You can serve on regular buns or thin buns
Substitue feta cheese if feta is not a prefered cheese

Yesterday I apologized for my part in turning the blog into a Farmers’ Co-op and today it is is a virtual cookbook for turkeys (which I want to thank you all for the recipes because I have saved them at kitten’s direction). I remember a year ago there was a call for the best hot toddy recipes. So given that the long weekend starts demain, maybe people can post their favourite mixed drink/concoction and then Sunday hangover recipes. Regardless tomorrow morning you will all read about the TERRA NOVA Pan Galactic Garboblaster drink that has to be consumed upside down hanging from a wardroom pipes.

@ ECO: NO RAIN? I just had a major rain storm that lasted about an hour. Thought the power was going to go out and I’m alone tonight in the middle of the woods with no neighbours. The wind keeps blowing the acorns off the trees, hitting the rod iron tables scaring the bejeebers out of me. It’s too hot to close the windows and I have no air conditioning.
By the way, I read the story about your mother’s accident. That is one of the worst stories I have ever heard. Poor you. Very sad. That would have been awhile getting over I’m sure.
